An orejano is an animal that carries no brand. Free, and true to itself. Un orejano es un animal sin marca. Libre, y fiel a sí mismo.

In the Uruguayan countryside the word describes cattle that never took an owner's mark. It became the word for a person who answers to no one but themselves. En el campo uruguayo la palabra describe al ganado que nunca llevó la marca de un dueño. Se volvió la palabra para quien no responde a nadie más que a sí mismo.

The name on this building is a tribute to a father who lived that way. The recipes came from his kitchen and they have not been shortened since. El nombre en este edificio es un homenaje a un padre que vivió así. Las recetas salieron de su cocina y no se han acortado desde entonces.
